How to Make Japanese Clear Onion Soup


  1. First start by adding large chunks of onion, carrot, ginger and garlic to the stockpot. This broth helps release their flavor.
  2. And now add broth and water to this. Then boil the soup for at least an hour.

  4. Then scoop into bowls and  to the top with fresh sliced mushrooms and to the scallions. 




Ingredients for soup 


  • Two  teaspoons sesame oil (or peanut oil)
  • eight  cups chicken broth
  • four  cups beef broth
  • four  cups water
  • one  large sweet onion, peeled and cut into wedges
  • six  cloves garlic, peeled and smashed
  • two  large carrots, cut into chunks
  • two  inch piece fresh ginger, sliced
  • four  whole scallions, chopped
  • ten  button mushrooms, sliced thin
  • salt 


Instructions for soup 

  1. Heat a large 8-quart skillet over gas, add oil, and add onion, garlic, carrot, and ginger to pot. Grate the vegetables on all sides to caramelize, being careful not to burn the garlic.   
  2. Pour in the chicken broth, beef broth, and water. Bring to a boil. nether to the heat to a low boil and simmer for at least one hour.
  3. Use a skimmer to delete to the vegetables from the broth. Taste, then salt as demand .     
  4. To serve: ladle hot broth into bowls and sprinkle chopped scallion and sliced mushrooms over the top.
